Fish Rolls with Almonds
Serves 4 to 6 as part of a multi course meal
Ingredients:
1 pound firm fish cut in thin slices 2 by 3 inches
1/4 pound ham cut in strips 1/2 by 2 inches
Marinade:
1 egg
1 tsp grated ginger
1 tsp rice wine
1 tsp salt
1 teaspoon corn starch
1 teaspoon onion juice
1 teaspoon sugar
2 teaspoons soy sauce
1/2 cup finely chopped almonds
Oil for frying
Garnish:
shredded lettuce or cabbage
Dipping Sauce:
1/2 cup rice vinegar
1/2 teaspoon minced green onion
1. Wrap the slices of fish around the strips of ham.
2. Mix the marinade in a medium bowl. Marinate the fish rolls in this.
3. Roll each fish roll in almonds to coat.
4. Heat 2 inches of oil in a frying pan or wok. Drop in the fish rolls and fry until cooked through and golden.
5. Arrange the shredded lettuce on a platter. Lay the rolls on top and serve the rice vinegar mixed with minced green onion. |
