2009- Fourth Annual Chili Cook-off
Just a heads up to all that this year's Chili Cook-off, the Fourth one, is scheduled for Saturday, Oct 31st. If you haven't been to this party before, it's not to be missed. And this year promises to be a little more off hook since it's on Halloween and more than just the teams will be dressing up.
Big question is will last year's champ, Turley, be around to defend his title?
Mark it on your calendars now. Each year we have around 500 people attend to enjoy live music outside, great chili, cold beer, and just a great time.

Entry Form for Bubba’s Fourth Annual
Shanghai Chili Cook-off
Sanctioned by the Chili Appreciation Society International
Saturday, October 31
6 a.m. Team Entry and Set-up
7 a.m. Flames On
Noon – 6 p.m. Public Entry and Tasting
Rules/Information for Participating Teams
1. Entry fee per team is 500 rmb (includes official cook-off t-shirt for each team member)
2. Teams can be sponsored by a corporation, restaurant, or individuals and should consist of one Head Cook, and up to three other members
3. Participation will be limited to the first 20 teams that register and pay
4. Entry form can be e-mailed to kennethjoewalker@gmail.com or dropped off at Bubba’s Bar-B-Que with the entry fee
5. Honors and/or awards will be presented for Best Chili (1st, 2nd, 3rd), People’s Choice, and Best Theme/Showmanship
6. Teams must cook chili onsite on the morning of October 11; pre-prep can take place at home, such as dicing onions, tomatoes, etc., or grinding/slicing peppers and spices; however, all cooking, browning, sautéing must take place on the chili cook-off grounds
7. Teams can arrive before 7 a.m. to set-up but cooking cannot start until 7 a.m.
8. Each team should use a minimum of 8 pounds of meat, using their choice of chicken, pork, beef, lamb, goat, or any exotic legal meat they choose
9. Beans will not be accepted, along with other “foreign objects” such as corn, rice, pasta, fruit, etc. Chili entries deemed to contain such items will be disqualified from judging
10. You will need to bring your own cooking tools, such as skillets if needed, chili pot, serving ladle, chopping knives, butcher boards, etc
11. Each team will have a table plus a table top gas burner
12. You will also be responsible for decorating your booth based on your theme (optional but required to compete for Best Theme)
13. Official judging will take place using a blind tasting process. Chili will be judged based on color, aroma, and taste
14. The People’s Choice Award will be decided by the public.

Is this going to be like this previous racist event where only Yank judges are allowed? Or are Aussies (who we all know are the best Chefs), are allowed to judge? |

Aparently, judges have to be yanks. Well, they did last year. Perhaps KJ can elighten us to this years judging panel.
Assuming KJ, Gary and some yank hamburger chef, but hopefully, they realise that Aussie chefs are the sh1t, and grab someone like Neal or Matt from BJ, or David Laris. |

Hey hey hey now. Don't talk without knowing what you're talking about. We've had judges from outside the U.S. in the past. We had a french chef in fact, furthest thing you'd ever expect to find at a chili cook-off.
Not sure about an ozzie one, but heck I am open.
Dilligaf is right.....i prefer to see major restaurants competing, especially an Americanized one.
And before you start talking about "the fix" I can assure you that this is the furthest thing in Shanghai from being fixed. The judging is done totally behind closed doors and I am not even slightly involved other than making the announcement when certain teams need to turn sample in for judging. The judges in fact are sequestered for about 3 hours, so actually it's not the best place to spend half the day but they do drink free and get to sample at least half of the chili. I say half cause we have group's A and B, and half the judges taste the A group and half tastes the B group, then the top ones are passed to a final set of judges who judge and actually pick the winners.

Malone`s will not be able to take part as we are doing a big golf bbq that afternoon near Thumb and Tong Ren is catering a joint international schools bbq halloween party so all the chefs are out doing lots of outside catering events that day. Sorry guys, i know its put a whole downer on the event now that our great "Beef n Bean Chili will not be in the running that afternoon. Have a good day nonetheless |

so no-one and i mean NO-ONE here puts pinto beans or kidney beans in their Chili ? dont believe it for a second. Yet no-one complains at Malone`s so i guess its just the odd few haters on the site looking for a rumble YET AGAIN |

Tomatoes scientifically speaking are fruit because of the seed structure....but we all know chef's use them as a vegetable. They go with chili.
Stop trying to get the field disqualified so that you might have a chance at winning this year. haha |

Since this Cookoff is about the Texas definition of Chili and the culture that goes with it... I can see any good Texan fervently protecting the sanctity of the Texas style chili bowl. Its all about the meat.. anything else gets in the way. |
