food in shenzhen and HK very boring..there is no variety except the sichuan food, cantonese food and western food...yet in shanghai, you got food from everywhere in china.

yes, in shanghai you can find food from everywhere but they not all good especially cantonese food. bi fang tang is a joke and so is crystal jade. the place on basement of hk plaze (?) is ok but still very average. Tsui Wah is also poor. tsui wah in hk is only popular because menu is long and is cheap and cheerful. the only place i recommend is this little place on taikang lu. owners and staff are from guangdong province so they know their stuff. menu is small and they only serve what they good at.

there has been an increase of cantonese type restaurants around shanghai but that's because it's the 'trend'. why, i dont know.

hk certainly does not have as much chinese regional cuisines as in shanghai but that's understandable. a restaurant serving very specialised/niche cuisines such as dongbei or hangzhou dishes will not survive in hk due to lack of demand and crippling high rent. certain regional chinese foods can be found in hk but you have to know where to go.
however, what options (both chinese and western) there are is off high quality and consistency which cannot be said of shanghai.
