| Post subject: Strawberry Spinach Salad |
Something nice to try on a hot day .. seeing as strawberries are so plentiful at the moment.
Strawberry Spinach Salad
Dressing
1 lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seeds
Salad
1/4 cup sliced almonds, toasted
1 1/2 cups strawberries (8 ounces)
1/2 medium cucumber, sliced and cut in half
1/4 small red onion, sliced into thin wedges
1 package baby spinach
1. For dressing, zest lemon to measure 1/2 tsp zest.
2. Juice lemon to measure 2 tbsp juice.
3. Combine zest, juice, vinegar, sugar, oil and poppy seeds
4. Whisk until well blended.
5. Cover; refrigerate until ready to use.
6. Preheat oven to 350 F.
7. For salad, spread almonds in single layer
over bottom of small baking pan.
8. Bake 10-12 minutes or until lightly toasted.
9. remove from oven; cool almonds.
10. Hull strawberries; cut strawberries into quarters.
11. Peel cucumber and slice; cut slices in half.
12. Slice onion into thin wedges.
13. Place spinach in large serving bowl; add
strawberries, cucumber and onion.
14. Whisk dressing; pour over salad, gently tossing to coat.
15. Sprinkle with almonds.

This is one of my very favourite summer salads, carrol! Cheers for posting the recipe!
You can also substitute the strawberries for chopped papaya or mango, whichever you prefer. And adding a touch of fresh, crumbled goat's cheese (maybe rolled in a bit of poppyseed) is delicious too! Same with yummy (caramelized) toasted pecans!

Yum, one of my favs too, carrol, although the use of strawberries is new to me. Great tip. Tried a couple of those variations before, Caesara. I've never tired the goat's cheese rolled in poppy seeds before though - must try it. |

Love spinach salad. Just one thing always worries me in China: pesticide residues on leafy vegetables. Once read that there is a special Vegetable rinse liquid to remove this? Anybody ever heard of this? |

Yes .. you can buy it at most places .. it's in the same section as dishwashing liquid. |

Strawberries in a salad was alien to me until my recent trip to the UK, interesting but not really my thing.

Yes I do!!! I couldn't find it for ages until I found out that it's also called arugula and you can get it in the herb section at city supermarket. |

The kind I buy has English on the label - green bottle - Vegetable/Fruit Cleaner
When we first moved here I went to a talk from a dr at World Link who suggested rinsing veggies in water with a drop or two of bleach instead of using a fruit wash. |
