I ask what tempertaure the ice is, the bar management ignore me, and a certain mentally unstable patron warns me to stay away.

Dear Free Soul, I'll ask again. . . What temperature is your ice?
You do realize you can't make a good cocktail unless your ice is at least minus 15 degrees celcius, right? If you are really serious about this cocktail making thing then you shold consider providing really good quality ice. And carve it by hand with an ice pick. Now then you would have the foundations for a decent bar.

Freesoul, it isn't a question of the ice not being cool enough 'for me'. I am just giving you some pointers on how to make a good cocktail. We aren't discussing my personal preference here, we are discussing the immutable laws of mixology.
Ice at minus 8 melts too fast when it comes into contact with spirits, juices, water etc. You want to be at least minus 15, or probably minus 18.
When you put minus 8 ice into a cocktail shaker you end up with a drink with too high a water content when it is poured. The drink will taste watery and lose its chill too quickly.
Another consideration is that cube machine ice melts too fast due to having a greater surface area compared to hand-carved block ice (the ideal choice). The result is a drink (say a scotch on the rocks) that warms and becomes watery too fast. For drinks served 'on the rocks' the ideal is a single large rock, not lots of small rocks.
Temperature is the key to getting cocktails right. 99% of bars get it wrong. If you could join the 1%. . . well. . . you would then have an excellent selling point.
To some extent you can offset the effects of insufficiently cold ice by being very very generous when filling the cocktail shaker with ice. But at the end of the day this not a true solution. It's a bit like wiping your nose on your sleeve - we've all done it, and it kind of works, but using tissues is so much nicer. |

Hey, why bother to discuss anything at all? Lets just throw **** at each other. That would be fun.
Freesoul, I prefer quiet music. I go to a bar to drink and talk, not to scream into the ear of the person next to me.
But it kind of depends what custom you are going after. We are in China after all, and many Chinese people don't appreciate the pleasure that can be obtained from having a relaxing and well mixed drink while listening to the expertly delivered witticisms of good friends. Instead Chinese people find nirvana in skulling low quality but high priced booze while screaming numbers at one another, all against a background of very black walls, very loud music, and very young girls. Apparently it has something to do with 5000 years of history. As a westerner I cannot claim to fully understand the phenomenon. I can merely look on and dream about one day evolving to a level that would allow me to join in the fun. |

Free soul, I reckon you are looking for ideas here to get more customers.
My opinions:
1. keep the drinks decent with reasonable price.
2. You may ask people for their opinions on music or future events, but you have to decide what kind of bar you want it to be yourself, since too many bars in Shanghai are just playing the same game. If you have something different, you might really stand out.
3. a good friendly atomosphere is enough for most bar hoppers, me thinks.
Just my two fens.

I don't go out drinking that much these days. But. . .
Senses is good for decor, excellent garden, really good approach to service, decent beer list, excellent wine list, OK cocktails, and reasonable prices for what you get (being able to get a 25RMB drink in a place of this class is GOOD value in Shanghai terms). My only criticisms so far would be on the cocktails front: their ice isn't cold enough for mixing really exceptional cocktails (the drinks come out slightly watery), and they use lime concentrate for their Daiquiri instead of fresh limes (that just doesn't work). But they are really accomodating, they can make drinks not on the cocktail list without cocking up, and they get bottles they don't have in if you ask, so you really can't complain. Anyway, the ice problem applies to 99% of bars, and the same for the lime concentrate (been served that stuff in 5 star hotels here).
Used to go to Beaver and Kangaroo a bit for cheap beer and a fun atmosphere, but it somehow isn't the same without Pete. Last time I was in Kangaroo I got to thow dice around and scream numbers at a young girl dressed in a skimpy outfit. This could grow on me.
To totally lose the crowds and have a decent drink with friends I like to go to some of the little Japanese hole-in-the-wall bars. No I don't go to the ones with hostesses. I go to the ones that mix good drinks. Some have minus 18 celcius ice in big blocks, nice decor, and very professional bartenders. You can sit in peace and relax with a really good drink. The barstaff also treat you like an adult - none of the "Kiwi! Finish your drink NOW!" bullfeces that passes for "fun" in some more Chinese bars. But I can't give you exact locations. . . it's a secret you see.
There is also a little German place on Xinle Rd. that is good for a quiet beer. They have Erdinger and a couple of other German beers at good prices. Got wireless Internet too.
Arch is another good spot. I like the decor, they have a couple of good beers, and their cocktail list is interesting and reasonably well mixed (but again the ice doesn't seem cold enough). The staff are friendly too. |

All the lessons you gave me we'll keep in mind.We are just opend small bar and trying to be a comfortable hangout for Shanghaiexpats.Altough our ice may not be cold enough but we believe our drinks are decent and
reasonable price.We don't have so many people working in the bar so far but we choose people carefully to keep the nice atmosphere. Music, we change the music according to the situation.Sometimes Loud,sometimes quiet, depending on the customer's requests in the bar.We are not big bar nor classy one but can be flexible instead.We wanna be a bar where customers away from their own countries can feel free, at home. we hope someday you'll come to our bar and enjoy conversation with our friendly bartenders and our regular customers.

By the way, I found out that the temperature in our freezer can't be minus 15c. We need to think about it.. |

top marks to that place basically, because if i leave anything in another bar, nobody knows what happened to it the next day. i live my passport, degree and certificates at senses for a month and its in the safe waiting 4 me. |

Yes,our mint is growing fast. I could find only 1 small shop sells live mint plant in the biggest flower market in Shanghai. Also i could find mint leaves at Carrefour but were almost wilting...
