Post subject: Yummy Courgette and Brie Soup!!!

I recently bought a Braun hand blender thingy and I've been going soup making crazy since I got it! And today I made the best soup! It's creamy and delicious!
My measurements are a bit vague (i always use approximates) but i think this will do about 6 servings.

*Fry half a large onion or 1 medium onion in a big slug of olive oil until soft
*Add to that a large crushed clove of garlic and a slug of white wine (the recipe also calls for a diced medium potato but I didn't put one in) and cook for another few minutes
*Add about 6 medium sized chopped courgettes (that's zuchini for some of you) and enough stock (they say vegetable but I like chicken) to cover the courgettes and then some.
*Bring to the boil and then simmer for about 20 minutes or so or until everything is soft.
*Add about 200 - 250 ml of milk and stir through
*Add about 200g of diced brie and stir until melted.
*Stir in 50ml of cream and a small rice bowl of torn basil leaves.
Then blend together and enjoy!! (it does look quite strange until blended but it tastes so good!!) yum

Thanks! Sounds yummy and I have one of those Braun things too - use it mainly for breakfast smoothies but soup is sounding great. I did make an attempt last weekend to copy the Black Bean tortilla soup I had at the new Coyote Grill in Pudong. It was a good first attempt but needs work - and it looked like barf which the Coyote Grill soup did not!

Black Bean Soup

1 pound ground pork or chorizo
1 onion -- chopped
2 stalks celery -- chopped
2 cloves garlic
3 cans black beans
2 cups chicken broth
2 tablespoons chili powder
1 teaspoon cumin
salt and pepper -- to taste
1 cup cream
fresh cilantro

Brown pork in pan. Remove to a bowl. Saute onion and celery in olive oil in same pan until soft. Add garlic and saute briefly. Add beans, broth, and seasonings and simmer for awhile. Puree with hand blender - be careful not to spatter all over the kitchen and your clothes. Add pork for last 5 minutes. Take off heat and stir in cream and cilantro.

That does sound good tnmom, and I never thought of using the blender for smoothies - got any good combinations you want to share?

The two favorites here are peanut butter, chocolate syrup, milk and a cut up frozen banana OR yogurt, Orange juice, frozen strawberries (Pines) and frozen banana. I just buy a ton of bananas and put them in the freezer unpeeled. Then just run the frozen banana under warm water and peel with a sharp knife then cut up into your smoothie.

Hey, was wondering, is there a special attachment to the hand held blender or just the blade? I have a Braun would like to make smoothies too.
