Michael - I think you have to help people define the term "fine dining".
Not all people's perceptions of "fine dining" are the same. Some people might think "City Dinner" in fine dining!!!

The definition of fine dining is pretty straight forward, and i wouldn't think anyone needs it explained to them.

Mimosa, New Heights, Laris = fine dining.

Malones, McDonalds and Wagas = NOT fine dining.

The problem of course the definition of fine dining is not straightforward. Depending on ones experience and education, it has several shades to it. Its more than cloth napkins, nice silverware, and a big price tag. Its one of those things you know it when you see it. Or is it just pretentious tag for overflated prices, haughty waiters with an attitude, and excessively wordy menus?

I think of it as a dining experience, where the food, the drinks, the service and environment come together to create a memorable positive experience that is exceptional.

I share the opinion of caronj about TMSK in Xintandi being a good place. We often take visiting senior execs from the U.S. there with their spouses. These seasoned travelers without exception have given the experience, including the food, high marks.

Post subject: Best French Fine dining in Shanghai by far...
Why does Club Shanghai never get a mention in any of these polls? It is by far the best French fine dining available in the city, price-wise its on a par with the more famous branded fine dining establishments. Yes its not on the Bund (yawn!) or neither does it have an extraordinary view, but its nestled above the historically significant Shanghai Concert Hall. The food is exceptional, but i also love the fact that after a leisurely dinner you can ajourn to the ajoining ballroom for some post dinner dancing to the in house big band. A bit of classic collonial style fun and a superb night out! There you go, the secret is now out...!

Jean George is " fine Dining " but NOT the best - that's what this thread is all about.
T8 was a great place, then they lost their Chef about a year ago, and it has gone down hill.
Honestly, I cannot think of a single place that is " the Best ", consistency is always the issue!

The reason I vouch for Club Shanghai is because there is a consistancy to the food, ambience and service. The restaurant isn't cool or hype, its really traditional and its somewhere you have to dress up for. But the chef there, i've heard, was formally a chef for Pierre Gagnaire and Alain Senderens, so he's a got good pedigree. I think the thing with Jean George, T8, Laris, Sens and Bund, Le Platane etc is that at first they were amazing because the named chef (the brand) was keeping an eye on things, so this creates the hype, but now they seem to have let standards slip. This is the problem with restaurants which have consultant chefs in charge, the reality is that they are seldom there to maintain standards in the kitchen. Gordon Ramsey has this problem in the UK, people think they are eating in a Gordon Ramsey restaurant when in fact the chef there is nowwhere near as good and they end up dissapointed and feeling ripped off. I like to try out new fine dining places as often as possible - I'm next going to check out the new Aussie chef at the URBN hotel...

T8 got a new chef this year. We've been there a couple of weeks ago, food's become noticeably better.
