OK so I've eaten a lot of frog from Hubei to SH and there's a new place in Jing'an that takes the cake. Let me paint you a picture...
Bullfrog drypot is the dish to be had, pinyin I think is Gan Guo Niu Wa.
First off and most importantly the frog is very fresh, so fresh that you can taste the subtle sweetness and so tender that it flakes off the bone. It's flash fried I think and served in a bowl of chili oil with dried chili, a little bit of ma la peppercorn and some fermented black bean. It's a nice combo and not overpowering.
Standard accoutrement are pickles and roasted garlic; however what is very nice is that there are also kettle chips and thinly sliced lotus root in the mix. They soak in the chili oil and are still crispy, and are a super tasty compliment to the frog. As I type this the mere recollection is making me food drunk.
So anyway can't recommend this place enough, every time I've been it's packed. It's across the street from the Paramount and below Yee-ha Texas BBQ. If you like frog check it out.
