Baking ingredients needed

Hello all,

I would like to try and make some goodies for our 18 month old child to try. However, i am puzzled on how to start without using baking soda, baking powder,vanilla and eggs?

Our child is allergic to gluten, peanuts, eggs and corn. where can i find gluten free and corn free vanilla? Also, have you seen Xanthan gum anywhere? How you tried any recipe without the items listed above?

I would love to start baking now so I can make a good cake for her birthday.

Suggestions needed. Thanks for any information you can provide me.

Is you child allergic to baking soda, baking powder, or vanilla?

You can get all three at cityshop although the vanilla is imitation. I am pretty sure that to make a cake baking powder in needed. If your daughter is not allergic to these 3 ingrediants I have a cake recipe that does not call for eggs.

Thank you kikidee. Those three ingredients (baking soda, baking powder and vanilla) has either gluten, or corn in it. Not sure exactly but have looked at it once or twice before. Thanks.

Maybe you can try the new organic store Ostore down at Gubei..they might have some such ingredients...

How severe is your child's allergies?

The reason I ask is because most people on the planet are allergic to corn, wheat, milk, eggs, etc at some level. When I was a kid I was tested for food allergies and was allergic to everything but other than nuts and dairy, I was fine with everything else. But if the milk is cooked, I don't have much of a problem for some reason.

I know quality of life is a factor and if she truly is severely sensitive to these ingedients then I would not try to replicate things like Cakes for her because maybe she will need to learn a different way of living now rather than be tempted to eat the real thing later. Maybe make your own fresh sorbet and freeze it in a creative cake mold...

Thank you snippets. I frequent the food allergies site often and have it on my favorites. We did a blood draw and the results were: eggs 4, Peanuts 1, wheat 4.74, corn 1, buckwheat 1, coconut 3 and others tested negative but have reactions when eaten. Great idea, i will definitely try anything we're not allergic to.
