We used a Dragonair Supercity Plus package which included 4 nights hotel (choice of loads), flights and airport transfers. I'm not sure they are still running the exact same offer, but they do have other offers to HK, including some for Disney so check out their website.

Cost was 15K rmb but that was for four of us and we did chose one of the more pricey hotels. Disney entrance tickets are on top of that and from memory I think was around 800 rmb in total, which includes entrance to loads of shows and all rides.
You don't necessarily need to book your Disney tickets beforehand, we didn't and there was no problem. Avoid the weekend if you can as it's really busy. We went on a Monday and it was great. They had the Xmas programme on with carnival, fireworks etc. Not sure when this ends so you might miss it.
To get to the Disney park is really easy. Just get on the underground (Kowloon side) and you can catch the 'Mickey Mouse' train connection straight to the entrance.
Have a great time. If you get chance take your son on one of the night 'harbour light' boat trips round Victoria Harbour. Boats leave from the Star Ferry in Kowloon at around 7pm. They have a light and music show using the buildings on HK Island and its pretty spectacular. My son loved it!
