Mulled Wine

Postby MissVicki » Wed Nov 28, 2007 8:44 am

With the Christmas season coming up I decided I wanted to make mulled wine. However, I can't find some of the ingredients such as cinnamon sticks and cloves. Any ideas where I can get some?

Thanks
MissVicki

I saw both in Pines JianHe last week....
But like all things....the stock comes and goes.
Not all chemicals are bad. Without chemicals such as hydrogen and oxygen, for example, there would be no way to make water, a vital ingredient in beer.....Dave Barry

It's important go be a little careful when buying cinnamon sticks. Sometimes cassia is sold as 'cinnamon' because it's cheaper and has more or less the same taste. In Chinese I think they may even be the same word - not sure.

Anyway, real cinnamon sticks will be something like paper thickness and very tightly rolled. Cassia is a lot thicker (maybe like cardboard) and doesn't roll as tight. Cassia also tends to unroll into square piece of bark when you boil it whereas cinnamon seems to hold its shape.

They have a similar flavor but cassia is 'hotter', and basically not as subtle and aromatic. Real cinnamon is probably what you want in mulled wine.
Naturally, I finished my set. . .

Last year my wife bought some mulled wine mixes, i think from city shopper. I believe the brand was Schwartz, and actually the great wall or Die Nasty wine do lend themselves quite well to this.

City Super on Huaihai Lu Shanxi Lu carry cloves and cinnamon sticks (or their local substitute).. As for the wine to use, pretty much any red will do if it's not too much oaked..
