As a HK Newbie you probably aren't that aware of the pros and cons between staying in Central versus Kowloon etc. Kowloon is cheaper, and personally I prefer it, even though my company pays for it all. Central is the business and designer shop district though there are also loads of designer malls in Kowloon. Kowloon however also has many cheaper discount style shops, whereas Central lacks them. My recommendations for excellent four star hotels are:
Renaissance Kowloon (Marriott chain) - by the Kowloon waterfront and walking distance to everything including the Tsim Shat Sui MTR and Ferry Terminals. Cost me about 100 GBP per night. Large comfy rooms. Great service. Prob my favourite.
Courtyard Marriott - very new hotel decked just like a JW Marriott. Amazingly comfy beds and very clean and modern. Downside is it's in Shuen Wan on the Island - about a 20 minute walk to the MTR. Near Macau Ferry Terminal though. Again, about 100 GBP per night.
Hotel LKF - boutique hotel right in the middle of party central on the island itself. Tad pricey but nice rooms. Downside is that, as its right in the middle of Lan Kwai Fong, even on the higher floors you can hear the bass thumping through your pillow at night! Trendy bar and restaurant there though. Stones throw away from all designer shops and Queen's Road Central. About 140 GBP per night.
Cheaper option would be the Kowloon Hotel - miniscule but comfy rooms. About 50 GBP per night for standard room. Possibly less as they have loads of rooms.
if you're looking to splash out then Island Shangri La, Conrad, Mandarin Oriental, and JW Marriott are top of the range bank busting stuff and all centrally located on the Island.

Also, ,because of the economy, HK government has suspended the 13% hotel tax indefinitely.
